Description

Juicy, tender chicken infused with Mediterranean flavors, perfect for gatherings or relaxing nights in.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup kalamata olives, pitted
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Zest and juice of 1 lemon


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the cherry tomatoes, olives, onion, and garlic on top.
  3. Season with oregano, salt, and pepper.
  4. Drizzle the olive oil and lemon juice over everything.
  5. Cover and cook on low for 6 hours or until the chicken is fully cooked.
  6. Shred the chicken using two forks before serving.

Notes

Serve with warm pita bread and a light Greek salad for a complete meal. For extra flavor, marinate the chicken before cooking.
