Description
This Slow Cooker Greek Goddess Shredded Chicken is an easy, delicious dish filled with Mediterranean flavors, perfect for weeknight dinners or gatherings.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 lemon, juiced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- Pita bread or rice, for serving
Instructions
- Place the chicken breasts into the slow cooker.
- In a separate bowl, combine the Greek yogurt, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
- Pour the mixture over the chicken.
- Cover and set the slow cooker to low for 6 to 8 hours or high for 3 to 4 hours.
- Shred the chicken using two forks and stir it back into the sauce.
- Fold in the chopped parsley and serve with pita bread or rice.
Notes
For added flavor, consider serving with a side of tabbouleh or Greek salad. The dish can also be frozen for up to three months.
