Description

This Slow Cooker Greek Goddess Shredded Chicken is an easy, delicious dish filled with Mediterranean flavors, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • Pita bread or rice, for serving


Instructions

  1. Place the chicken breasts into the slow cooker.
  2. In a separate bowl, combine the Greek yogurt, lemon juice, minced garlic, oregano, thyme, salt, and black pepper.
  3. Pour the mixture over the chicken.
  4. Cover and set the slow cooker to low for 6 to 8 hours or high for 3 to 4 hours.
  5. Shred the chicken using two forks and stir it back into the sauce.
  6. Fold in the chopped parsley and serve with pita bread or rice.

Notes

For added flavor, consider serving with a side of tabbouleh or Greek salad. The dish can also be frozen for up to three months.
