Ingredients
- 1.5 lbs chicken thighs (boneless, skinless)
- 1 cup honey
- 1/4 cup soy sauce (low sodium)
- 4 cloves garlic (minced)
- 1 tablespoon ginger (minced or grated)
- 1 red bell pepper (sliced)
- 2 cups broccoli florets
- 1 cup carrots (sliced)
- 1 tablespoon sesame oil (for drizzling)
- Salt and pepper to taste
Instructions
- Place the chicken thighs at the bottom of the slow cooker.
- In a mixing bowl, combine the honey, soy sauce, minced garlic, and ginger. Whisk until well blended.
- Pour the honey garlic mixture over the chicken.
- Top with sliced bell pepper, broccoli florets, and carrot slices, sprinkling with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Drizzle with sesame oil before serving.
Notes
For a thicker sauce, remove chicken after cooking, whisk in cornstarch, and simmer until thickened.
