Description

A comforting slow cooker dish of tender chicken thighs in a sweet and savory honey garlic sauce, accompanied by vibrant vegetables.


Ingredients

  • 1.5 lbs chicken thighs (boneless, skinless)
  • 1 cup honey
  • 1/4 cup soy sauce (low sodium)
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (minced or grated)
  • 1 red bell pepper (sliced)
  • 2 cups broccoli florets
  • 1 cup carrots (sliced)
  • 1 tablespoon sesame oil (for drizzling)
  • Salt and pepper to taste


Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. In a mixing bowl, combine the honey, soy sauce, minced garlic, and ginger. Whisk until well blended.
  3. Pour the honey garlic mixture over the chicken.
  4. Top with sliced bell pepper, broccoli florets, and carrot slices, sprinkling with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours.
  6. Drizzle with sesame oil before serving.

Notes

For a thicker sauce, remove chicken after cooking, whisk in cornstarch, and simmer until thickened.
