Description

A comforting and easy-to-make dish featuring tender chicken and vibrant vegetables in a sweet and savory honey garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup honey
  • 1/2 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)


Instructions

  1. Place the chicken breasts in your slow cooker.
  2. In a separate bowl, whisk together honey, soy sauce, and minced garlic until well combined.
  3. Pour the honey garlic mixture over the chicken, ensuring it coats every piece.
  4. Top the chicken with your chosen mixed vegetables.
  5. Cover and set your slow cooker to low for 6-8 hours or high for 4 hours.
  6. If you prefer a thicker sauce, mix cornstarch with a bit of cold water and stir into the slow cooker during the last 30 minutes of cooking.
  7. Once cooked, shred the chicken with two forks and stir everything together before serving.

Notes

Serve over rice or quinoa and garnish with fresh green onions or sesame seeds. This dish can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
