Description

Ingredients

  • 4 chicken thighs, bone-in and skinless
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • Juice and zest of 2 lemons
  • Fresh herbs (thyme, rosemary, or parsley), chopped
  • Salt and pepper to taste
  • Optional: chopped vegetables like carrots or bell peppers


Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Add the diced onion and garlic at the base of the slow cooker.
  3. Place the seasoned chicken on top of the onions.
  4. Pour the chicken broth and lemon juice over the chicken, followed by the rice.
  5. Gently mix in the lemon zest and chopped herbs, ensuring the rice is evenly distributed.
  6. Cover and cook on low for about 240 minutes, or until the chicken is cooked through and tender.
  7. Fluff the rice with a fork before serving and incorporate any juices.
