Ingredients
- 4 boneless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup long-grain white rice
- 2 cups water
- Fresh parsley for garnish (or cilantro)
Instructions
- Arrange the chicken breasts evenly in the slow cooker.
- In a small bowl, combine lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Pour this mixture over the chicken.
- Add chicken broth and gently mix to combine.
- Secure the lid and set the slow cooker to low. Cook for 6-7 hours.
- About 30 minutes before serving, add the long-grain rice and water, stirring gently.
- Cover again and continue cooking until rice is fluffy and has absorbed most of the liquid.
- Fluff rice with a fork before serving and place chicken on top. Garnish with fresh parsley.
Notes
For added flavor, marinate chicken in the lemon-herb mixture before cooking. Consider adding vegetables like carrots or bell peppers to the slow cooker.
