Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 2 cups water
  • Fresh parsley for garnish (or cilantro)


Instructions

  1. Arrange the chicken breasts evenly in the slow cooker.
  2. In a small bowl, combine lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper. Pour this mixture over the chicken.
  3. Add chicken broth and gently mix to combine.
  4. Secure the lid and set the slow cooker to low. Cook for 6-7 hours.
  5. About 30 minutes before serving, add the long-grain rice and water, stirring gently.
  6. Cover again and continue cooking until rice is fluffy and has absorbed most of the liquid.
  7. Fluff rice with a fork before serving and place chicken on top. Garnish with fresh parsley.

Notes

For added flavor, marinate chicken in the lemon-herb mixture before cooking. Consider adding vegetables like carrots or bell peppers to the slow cooker.
