Description

A creamy and savory Crockpot Potato Soup that embodies comfort food at its finest, perfect for chilly days and family gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 slices of bacon, cooked and crumbled
  • Salt and pepper to taste
  • Optional toppings: green onions, additional cheese, sour cream


Instructions

  1. Place the diced potatoes and chopped onion into the Crockpot.
  2. Pour in the chicken broth and season generously with salt and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  4. To thicken the soup, mash some of the potatoes right in the Crockpot to achieve your desired consistency.
  5. Stir in the heavy cream, shredded cheese, and crumbled bacon.
  6. Cook on low for an additional 30 minutes or until the cheese is fully melted.
  7. Serve the soup hot, garnished with optional toppings, and enjoy!

Notes

For a vegetarian version, substitute chicken broth with vegetable broth. You can also experiment with different cheese types for varied flavors.
