Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- 6 slices of bacon, cooked and crumbled
- Salt and pepper to taste
- Optional toppings: green onions, additional cheese, sour cream
Instructions
- Place the diced potatoes and chopped onion into the Crockpot.
- Pour in the chicken broth and season generously with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- To thicken the soup, mash some of the potatoes right in the Crockpot to achieve your desired consistency.
