Description

A comforting and creamy dish featuring tender shredded chicken, zesty corn, and a creamy ranch base—perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can corn, drained
  • 1 cup cream cheese
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. In your slow cooker, combine the shredded chicken, corn, cream cheese, and ranch seasoning mix.
  2. Using a spoon, stir until everything is well blended.
  3. Set your slow cooker to low and let it cook for 4-6 hours, or on high for 2-3 hours, until heated through.
  4. Once it’s done cooking, gently stir in the shredded cheddar cheese, diced red onion, and cilantro.
  5. Taste and season with salt and pepper as needed.
  6. Serve with tacos, in bowls, or with chips for a delightful dipping experience.

Notes

For a lighter version, replace cream cheese with Greek yogurt. Add diced jalapeños for an extra kick.
