Ingredients
- 2 cups cooked chicken, shredded
- 1 can corn, drained
- 1 cup cream cheese
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In your slow cooker, combine the shredded chicken, corn, cream cheese, and ranch seasoning mix.
- Using a spoon, stir until everything is well blended.
- Set your slow cooker to low and let it cook for 4-6 hours, or on high for 2-3 hours, until heated through.
- Once it’s done cooking, gently stir in the shredded cheddar cheese, diced red onion, and cilantro.
- Taste and season with salt and pepper as needed.
- Serve with tacos, in bowls, or with chips for a delightful dipping experience.
Notes
For a lighter version, replace cream cheese with Greek yogurt. Add diced jalapeños for an extra kick.
