Ingredients
- 1 lb Boneless Chicken Breasts/Thighs
- 2 cups Corn (Fresh grilled, frozen, or canned)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese (or Feta as substitute)
- Juice of 1 Lime
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional, for garnish)
Instructions
- Place the chicken in the slow cooker.
- Add corn, cream cheese, and garlic directly on top of the chicken.
- Squeeze in the lime juice and sprinkle the spice blend (chili powder, smoked paprika, onion powder) evenly over the ingredients.
- Cover and cook on low for about 4 hours (or high for about 2 hours if in a time crunch).
- Once cooked, shred the chicken with two forks, mixing it back into the sauce.
- Stir in Cotija cheese before serving and garnish with fresh cilantro if desired.
