Description

A comforting dish that combines flavors of grilled corn, creamy goodness, and zesty accents, perfect for family dinners and gatherings.

Ingredients

  • 1 lb Boneless Chicken Breasts/Thighs
  • 2 cups Corn (Fresh grilled, frozen, or canned)
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese (or Feta as substitute)
  • Juice of 1 Lime
  • 2 cloves Garlic (minced)
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional, for garnish)

Instructions

  1. Place the chicken in the slow cooker.
  2. Add corn, cream cheese, and garlic directly on top of the chicken.
  3. Squeeze in the lime juice and sprinkle the spice blend (chili powder, smoked paprika, onion powder) evenly over the ingredients.
  4. Cover and cook on low for about 4 hours (or high for about 2 hours if in a time crunch).
  5. Once cooked, shred the chicken with two forks, mixing it back into the sauce.
  6. Stir in Cotija cheese before serving and garnish with fresh cilantro if desired.

Notes

Consider preparing ingredients the night before for an easier cooking experience. Use low-fat options for a lighter dish and incorporate additional veggies or beans for extra nutrition.
