Ingredients
- 1 pound ground beef
- 1 cup crushed crackers
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked bacon, chopped
- 1/2 cup jalapeños, chopped (fresh or pickled)
- 1/4 cup ranch dressing (plus more for topping)
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef, crushed crackers, shredded cheddar, chopped bacon, jalapeños, ranch dressing, egg, garlic powder, onion powder, salt, and pepper.
- Mix until just combined. Be careful not to overmix, or the meatloaf may become dense.
- Shape the meat mixture into a loaf and place it in a baking dish.
- Top the meatloaf with a layer of ranch dressing for added flavor.
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).
- Allow it to rest for a few minutes before slicing to maintain juicy flavors.
