Description

A flavorful twist on a classic meatloaf with jalapeños and bacon for a delightful kick.


Ingredients

  • 1 pound ground beef
  • 1 cup crushed crackers
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup jalapeños, chopped (fresh or pickled)
  • 1/4 cup ranch dressing (plus more for topping)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, crushed crackers, shredded cheddar, chopped bacon, jalapeños, ranch dressing, egg, garlic powder, onion powder, salt, and pepper.
  3. Mix until just combined. Be careful not to overmix, or the meatloaf may become dense.
  4. Shape the meat mixture into a loaf and place it in a baking dish.
  5. Top the meatloaf with a layer of ranch dressing for added flavor.
  6. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Allow it to rest for a few minutes before slicing to maintain juicy flavors.

Notes

Avoid overmixing to keep the meatloaf tender. Resting before slicing enhances juiciness.
