Description

A comforting dish combining hearty ingredients with a rich, smoky flavor, perfect for gatherings and mid-week dinners.


Ingredients

  • 1 can black eyed peas, drained and rinsed
  • 1 cup turkey, diced (smoked turkey is preferred)
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: cooked scalloped potatoes and green beans for serving


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Toss in the chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
  3. Stir in the diced turkey, followed by the smoked paprika. Let it cook for another 3-4 minutes until fragrant.
  4. Add in the rinsed black-eyed peas and pour in the chicken broth.
  5. Bring everything to a gentle boil, then reduce the heat and let it simmer for about 20-30 minutes.
  6. Taste and season with salt and pepper as needed.
  7. Serve hot, alongside scalloped potatoes and green beans, for a complete meal.

Notes

For a vegetarian version, substitute turkey with mushrooms or tempeh. You can also add a dash of liquid smoke for extra smokiness.
