Ingredients
- 1 can black eyed peas, drained and rinsed
- 1 cup turkey, diced (smoked turkey is preferred)
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: cooked scalloped potatoes and green beans for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Toss in the chopped onion and minced garlic; sauté until softened, about 3-4 minutes.
- Stir in the diced turkey, followed by the smoked paprika. Let it cook for another 3-4 minutes until fragrant.
- Add in the rinsed black-eyed peas and pour in the chicken broth.
- Bring everything to a gentle boil, then reduce the heat and let it simmer for about 20-30 minutes.
- Taste and season with salt and pepper as needed.
- Serve hot, alongside scalloped potatoes and green beans, for a complete meal.
Notes
For a vegetarian version, substitute turkey with mushrooms or tempeh. You can also add a dash of liquid smoke for extra smokiness.
