Ingredients
- 2 cups rolled oats
- 2 ripe bananas, mashed (fresh or frozen)
- 1/2 cup peanut butter (smooth or crunchy)
- 2 cups milk (your choice: dairy or plant-based)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, mix the bananas, peanut butter, milk, honey, and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir until well combined.
- Transfer the mixture to the greased baking dish and spread evenly.
- Bake for about 30 minutes, or until the top is golden and the edges are set.
- Allow it to cool for a few minutes before serving.
Notes
Great warm with yogurt or fresh berries. For leftovers, store in the refrigerator for up to a week.
