Description
These no-bake Pumpkin Protein Balls combine oats and pumpkin with sweet maple syrup for a nutritious snack any time of year.
Ingredients
- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 1/2 cup pumpkin puree
- 1/4 cup almond butter
- 2 tablespoons maple syrup
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a medium mixing bowl, combine rolled oats, vanilla protein powder, pumpkin pie spice, cinnamon, and salt. Stir until well mixed.
- Add the pumpkin puree, almond butter, and maple syrup to the dry ingredients. Stir thoroughly until a thick dough comes together.
- If desired, fold in the mini chocolate chips gently.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
- Once chilled, roll the mixture into 1-inch balls.
- Place the formed balls onto a parchment-lined baking sheet and refrigerate for at least 1 hour to set.
Notes
Store leftovers in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
