Description

These no-bake Pumpkin Protein Balls combine oats and pumpkin with sweet maple syrup for a nutritious snack any time of year.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 cup pumpkin puree
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)


Instructions

  1. In a medium mixing bowl, combine rolled oats, vanilla protein powder, pumpkin pie spice, cinnamon, and salt. Stir until well mixed.
  2. Add the pumpkin puree, almond butter, and maple syrup to the dry ingredients. Stir thoroughly until a thick dough comes together.
  3. If desired, fold in the mini chocolate chips gently.
  4. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
  5. Once chilled, roll the mixture into 1-inch balls.
  6. Place the formed balls onto a parchment-lined baking sheet and refrigerate for at least 1 hour to set.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
