Ingredients
- 2 cans black eyed peas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the drained black eyed peas, vegetable broth, smoked paprika, salt, and pepper. Stir well.
- Bring the mixture to a gentle simmer and cook for 15-20 minutes until heated through.
- Serve hot as a main dish or side.
Notes
For added flavor, substitute fresh or dried herbs and consider adding a scoop of rice for a one-pot meal.
