Description

A comforting and flavorful dish of Southern black eyed peas, perfect for celebrations or weeknight dinners.


Ingredients

  • 2 cans black eyed peas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the drained black eyed peas, vegetable broth, smoked paprika, salt, and pepper. Stir well.
  5. Bring the mixture to a gentle simmer and cook for 15-20 minutes until heated through.
  6. Serve hot as a main dish or side.

Notes

For added flavor, substitute fresh or dried herbs and consider adding a scoop of rice for a one-pot meal.
