Description

A hearty and comforting Southern dish symbolizing good luck, perfect for family gatherings or a cozy dinner.

Ingredients

  • 1 pound dried black-eyed peas (or 2 cans, drained and rinsed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 4 cups vegetable or chicken broth
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. If using dried peas, soak them in water for at least 4 hours or overnight.
  2. In a large pot, heat a splash of oil over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté for about 5 minutes until fragrant and softened.
  3. Pour in the broth, followed by the black-eyed peas, smoked paprika, and cayenne pepper. Stir to combine.
  4. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 25 minutes (or until the peas are tender).
  5. Taste and adjust seasoning with salt and pepper.
  6. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian option, ensure to use vegetable broth. Enjoy over rice or with cornbread for a classic Southern meal.
