Description

A hearty and flavorful dish of Southern Black Eyed Peas, perfect for good luck on New Year’s and any comforting meal.


Ingredients

  • 1 cup dried black-eyed peas (sorted and rinsed)
  • 4 cups vegetable broth (for cooking the peas)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • 1 leaf bay leaf
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large bowl, rinse and sort the black-eyed peas, removing any debris.
  2. In a pot, heat the olive oil over medium heat. Add the diced onion and bell pepper. Cook for 3-4 minutes, until softened. Stir in the minced garlic and cook for another minute.
  3. Add the black-eyed peas, vegetable broth, cumin, paprika, cayenne pepper, bay leaf, salt, and black pepper to the pot. Bring to a boil.
  4. Reduce the heat to low and cover. Let it simmer for about 20-25 minutes until the peas are tender. Stir occasionally, adding more broth if needed.
  5. Remove from heat. Discard the bay leaf. Adjust seasoning as necessary. Garnish with fresh parsley and enjoy!

Notes

Soaking the peas overnight can reduce cooking time, but it’s not essential. This recipe doubles easily for larger gatherings.
