Instructions
- Rinse the black-eyed peas under cold water, then drain them well.
- In a large pot, combine the peas with water or chicken broth.
- Bring to a boil before reducing the heat to a gentle simmer.
- In a separate skillet, cook the diced ham or bacon until crispy, then remove it and set aside.
- In the same skillet, sauté the chopped onion and minced garlic until they become soft and fragrant.
- Add the sautéed onion and garlic, crispy bacon or ham, salt, black pepper, cayenne pepper, and bay leaves to the pot with the peas.
- Let it simmer for about 30-40 minutes, or until the peas have reached your desired tenderness.
