Description

A hearty and nutritious casserole packed with chicken, beans, and vibrant spices, perfect for family dinners and gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup diced tomatoes with green chilies
  • 1 cup cooked quinoa or brown rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tablespoon taco seasoning
  • Olive oil for drizzling
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, tomatoes, quinoa, and taco seasoning. Mix well.
  3. Transfer the mixture to a greased baking dish, spreading it out evenly.
  4. Top with shredded cheese and drizzle with a little olive oil.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
  6. Let it sit for 5 minutes before serving. Garnish with fresh cilantro if desired.

Notes

For added flavor, consider using a rotisserie chicken. Feel free to mix in your favorite vegetables like bell peppers or zucchini.
