Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup diced tomatoes with green chilies
- 1 cup cooked quinoa or brown rice
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 tablespoon taco seasoning
- Olive oil for drizzling
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, black beans, corn, tomatoes, quinoa, and taco seasoning. Mix well.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Top with shredded cheese and drizzle with a little olive oil.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
- Let it sit for 5 minutes before serving. Garnish with fresh cilantro if desired.
Notes
For added flavor, consider using a rotisserie chicken. Feel free to mix in your favorite vegetables like bell peppers or zucchini.
