Description

Delicious Southwestern chicken wraps filled with flavorful marinated chicken, fresh veggies, and creamy dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 red bell pepper, thinly sliced
  • 1 cup fresh spinach or mixed greens
  • ½ cup corn (canned or frozen)
  • ½ cup black beans, drained and rinsed
  • Tortillas (your choice of flour or corn)
  • ¼ cup ranch dressing or your favorite sauce
  • Optional toppings: avocado, cheese, cilantro


Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Add the chicken breasts and ensure they’re well coated. Allow to marinate for about 10 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-7 minutes on each side, or until golden and cooked through. Let it rest before slicing.
  3. Prep the filling: While the chicken cooks, slice the bell pepper and wash the spinach. Mix the corn and black beans together in a bowl.
  4. Assemble the wraps: Lay a tortilla flat and layer the spinach, sliced chicken, bell pepper, corn, and black beans. Drizzle with ranch dressing and sprinkle any additional toppings you prefer.
  5. Wrap tightly: Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling. Slice in half if desired.

Notes

For added flavor, try using a spicy dressing or adding jalapeños. Leftovers can be stored in an airtight container for up to 3 days.
