Description

Packed with vibrant flavors and a satisfying crunch, these seasoned chicken wraps are perfect for lunch or picnics.


Ingredients

  • 1 pound of chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn, fresh or canned
  • 1 bell pepper, diced (any color)
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • 4 large whole-grain tortillas
  • Salsa or ranch dressing for drizzling


Instructions

  1. Heat olive oil in a skillet over medium heat. Add in the diced chicken, chili powder, cumin, salt, and pepper. Sauté until the chicken is fully cooked and nicely browned, approximately 6-8 minutes.
  2. Add the corn and bell pepper to the skillet, cooking for another 2-3 minutes until the vegetables are tender but still crisp.
  3. Remove the chicken and veggies from heat. Lay out the tortillas on a flat surface.
  4. Evenly distribute the chicken mixture onto each tortilla, followed by sliced avocado, shredded lettuce, and cheese.
  5. Drizzle with salsa or dressing of your choice, then roll up each tortilla tightly. Slice in half if desired.
