Description

A vibrant Southern dish combining bold Cajun spices with boiled eggs and beef, perfect for gatherings.


Ingredients

  • 12 Eggs
  • 1 lb Beef (cut into bite-sized pieces)
  • Cajun seasoning (to taste)
  • 1 Lemon (for zest and juice)
  • Fresh parsley (for garnish)
  • Water (for boiling)
  • Salt (to taste)


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Carefully add eggs and beef, and cook until the eggs are hard-boiled (about 10-12 minutes).
  3. Prepare a bowl with ice water for the eggs once cooked.
  4. Transfer the eggs to the ice bath to cool.
  5. Combine the beef pieces with Cajun seasoning in a separate bowl, ensuring they’re fully coated.
  6. Once the eggs are cooled, peel and mix them with the seasoned beef.
  7. Squeeze fresh lemon juice over the mixture and add chopped parsley before serving.

Notes

Serve warm with crusty bread or over rice. Leftovers can be stored in an airtight container in the fridge for up to three days.
