Description

Juicy chicken breasts stuffed with vibrant spinach and creamy cheese, perfect for a healthy, low-carb meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach (or frozen, well-drained)
  • 4 oz cream cheese (or Greek yogurt for a lighter option)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: herbs like oregano or basil for added flavor


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add spinach and cook until wilted. Remove from heat and mix in cream cheese and shredded cheese until well combined.
  4. Season the mixture with salt, pepper, and optional herbs.
  5. Take each chicken breast and carefully slice open to create a pocket. Stuff the pocket with the spinach mixture.
  6. Secure the openings with toothpicks if needed, then place chicken breasts in a baking dish.
  7. Drizzle with olive oil and season with additional salt and pepper.
  8. Bake for approximately 25 minutes, or until the chicken is cooked through and juices run clear.
