Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach (or frozen, well-drained)
- 4 oz cream cheese (or Greek yogurt for a lighter option)
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: herbs like oregano or basil for added flavor
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add spinach and cook until wilted. Remove from heat and mix in cream cheese and shredded cheese until well combined.
- Season the mixture with salt, pepper, and optional herbs.
- Take each chicken breast and carefully slice open to create a pocket. Stuff the pocket with the spinach mixture.
- Secure the openings with toothpicks if needed, then place chicken breasts in a baking dish.
- Drizzle with olive oil and season with additional salt and pepper.
- Bake for approximately 25 minutes, or until the chicken is cooked through and juices run clear.
