Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 2 large eggs
- ½ cup buttermilk
- Zest of 1 lemon
- ⅓ cup fresh lemon juice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups fresh strawberries (sliced)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a mixing bowl, cream the softened butter and sugar together until fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the buttermilk, lemon zest, and lemon juice, mixing until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until combined.
- Fold in the sliced strawberries gently into the batter.
- Pour the batter into the prepared cake pan and bake for about 25 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
