Description

A moist and flavorful cinnamon coffee cake, perfect for breakfast or as a sweet treat for gatherings.


Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon (plus more for topping)
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk (or non-dairy milk with vinegar for a substitute)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, cream the softened butter until fluffy. Add the eggs one at a time, followed by the vanilla.
  4. Gradually mix in the dry ingredients, alternating with the buttermilk until just combined.
  5. Pour half of the batter into the prepared pan. Sprinkle a generous layer of cinnamon-sugar on top. Then pour in the remaining batter and finish with another layer of cinnamon-sugar.
  6. Bake for about 35 minutes or until a toothpick inserted comes out clean.
  7. Let it cool slightly before serving.

Notes

For the best flavor, let your butter come to room temperature before mixing. You can add nuts or chocolate chips for added crunch and flavor.
