Description

A delightful coffee cake with a tender crumb and moist texture, perfect for breakfast or as an afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup plain yogurt (or sour cream)
  • 2 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • Topping of your choice (such as nuts or crumb)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pan.
  2. Cream together the butter and sugar in a mixing bowl until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Incorporate the yogurt and vanilla, blending until smooth.
  5. Sift together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in nuts or cinnamon if desired.
  8. Pour the batter into the prepared pan and smooth the top evenly.
  9. Bake for 35–40 minutes, or until a toothpick comes out clean.
  10. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack.

Notes

For an extra moist cake, ensure all ingredients are at room temperature. You can substitute half the yogurt with applesauce for a lighter variant. Enjoy with fresh berries or a scoop of yogurt.
