Description

A warm and hearty slow cooker casserole combining tender beef and flavorful potatoes that is perfect for family gatherings and cozy dinners.


Ingredients

  • 2 pounds of beef (chopped or ground)
  • 4 cups of potatoes (peeled and diced)
  • 1 cup of shredded cheese (any favorite variety)
  • 1 onion (diced)
  • 2 cups of cream of mushroom soup (or a lighter alternative)
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish


Instructions

  1. In a large bowl, combine the diced beef, potatoes, onion, and season with salt and pepper.
  2. Layer half of the potato mixture in the slow cooker.
  3. Spread half of the soup and cheese over the potatoes.
  4. Add the remaining potato mixture and top with the rest of the soup and cheese.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until the beef and potatoes are tender.

Notes

For an extra boost of flavor, consider searing the beef before adding it to the slow cooker. You can also customize the dish with different vegetables or substitute potatoes with cauliflower for a low-carb option.
