Description

Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, mix the chicken broth, lemon juice, garlic, thyme, oregano, salt, and pepper; pour over the chicken.
  3. Add the rice on top and stir gently to combine everything.
  4. Cover and cook on low for about 4 hours, or until the chicken is cooked through and the rice is fluffy.
  5. Shred the chicken with two forks and stir the mixture well before serving.
