Description

A delightful cake featuring caramelized blueberries atop a soft, moist base, perfect for gatherings or a sweet treat.


Ingredients

  • 2 cups fresh blueberries (or frozen)
  • 1 cup sugar, divided
  • 1/2 cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a skillet, combine the blueberries with 1/2 cup sugar over medium heat. Cook until the sugar dissolves and the blueberries begin to burst, then pour into the prepared pan.
  3. In a mixing bowl, cream butter and remaining sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  6. Pour the batter over the blueberries in the pan and spread evenly.
  7. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes, then invert onto a serving plate.

Notes

For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend. Serve warm with vanilla ice cream or whipped cream.
