Ingredients
- 2 cups fresh blueberries (or frozen)
- 1 cup sugar, divided
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- In a skillet, combine the blueberries with 1/2 cup sugar over medium heat. Cook until the sugar dissolves and the blueberries begin to burst, then pour into the prepared pan.
- In a mixing bowl, cream butter and remaining sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
- Pour the batter over the blueberries in the pan and spread evenly.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes, then invert onto a serving plate.
Notes
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend. Serve warm with vanilla ice cream or whipped cream.
