Ingredients
- Gnocchi (store-bought or homemade)
- Fresh spinach
- Feta cheese, crumbled
- Heavy cream (or a lighter alternative)
- Olive oil
- Garlic, minced
- Salt
- Pepper
- Optional: Parmesan cheese for serving
Instructions
- In a large pot of salted boiling water, cook the gnocchi until they float, about 2-3 minutes.
- While the gnocchi cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Stir in the fresh spinach and allow it to wilt before adding the cream. Combine well.
- Once the gnocchi is done, transfer it directly into the skillet, reserving some pasta water.
- Add the crumbled feta and mix gently. If the mixture is too thick, incorporate a splash of reserved pasta water.
- Season with salt and pepper, and toss everything together until well combined and warm.
Notes
Serve warm, garnished with additional feta and cracked black pepper. Pairs well with a crisp green salad or garlic bread.
