Description

A rich and comforting dish featuring soft gnocchi, vibrant spinach, and tangy feta, perfect for cozy family nights or sophisticated dinner parties.


Ingredients

  • Gnocchi (store-bought or homemade)
  • Fresh spinach
  • Feta cheese, crumbled
  • Heavy cream (or a lighter alternative)
  • Olive oil
  • Garlic, minced
  • Salt
  • Pepper
  • Optional: Parmesan cheese for serving


Instructions

  1. In a large pot of salted boiling water, cook the gnocchi until they float, about 2-3 minutes.
  2. While the gnocchi cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Stir in the fresh spinach and allow it to wilt before adding the cream. Combine well.
  4. Once the gnocchi is done, transfer it directly into the skillet, reserving some pasta water.
  5. Add the crumbled feta and mix gently. If the mixture is too thick, incorporate a splash of reserved pasta water.
  6. Season with salt and pepper, and toss everything together until well combined and warm.

Notes

Serve warm, garnished with additional feta and cracked black pepper. Pairs well with a crisp green salad or garlic bread.
