Ingredients
- 2 cups cooked chicken, shredded (rotisserie or grilled)
- 1 cup jasmine rice
- 1 cup pineapple chunks (fresh or canned)
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2 minutes.
- Add the bell pepper and cook for another 3 minutes until slightly softened.
- Stir in the shredded chicken along with the soy sauce and ginger, mixing well to coat.
- Add the pineapple chunks, letting them heat through for a couple of minutes.
- Stir in the cooked rice, ensuring everything is evenly combined. Cook for an additional 5 minutes until warmed.
- Season with salt and pepper to taste. Serve hot, garnished with green onions.
