Description

A delightful one-pan dish combining the tropical sweetness of pineapple with savory chicken and fluffy jasmine rice.


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie or grilled)
  • 1 cup jasmine rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2 minutes.
  2. Add the bell pepper and cook for another 3 minutes until slightly softened.
  3. Stir in the shredded chicken along with the soy sauce and ginger, mixing well to coat.
  4. Add the pineapple chunks, letting them heat through for a couple of minutes.
  5. Stir in the cooked rice, ensuring everything is evenly combined. Cook for an additional 5 minutes until warmed.
  6. Season with salt and pepper to taste. Serve hot, garnished with green onions.

Notes

For added flavor, consider marinating the chicken overnight. A squeeze of lime juice right before serving can elevate the dish further.
