Ingredients
- 1 lb tender steak (flank or skirt)
- 1 cup long-grain rice, rinsed
- 2 cups beef broth or water
- 1 cup shredded cheese (cheddar or a blend)
- 1 bell pepper, diced
- 1 onion, diced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
- Optional toppings: sour cream, guacamole, fresh cilantro
Instructions
- Cook the Rice: In a medium pot, bring the beef broth or water to a boil. Add the rinsed rice, a pinch of salt, and reduce heat to a simmer. Cover and cook for about 15-20 minutes, until the liquid is absorbed and rice is fluffy.
- Prepare the Steak: While the rice cooks, heat olive oil in a skillet over medium-high heat. Season the steak with salt, pepper, chili powder, and cumin. Sear the steak for about 4-5 minutes per side, or until it reaches your desired doneness.
- Add the Vegetables: Once the steak is cooked, remove it from the skillet and let it rest. In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until soft.
- Combine Everything: Slice the steak thinly against the grain. Add the cooked rice to the skillet with the sautéed vegetables and mix in the sliced steak. Top everything with shredded cheese and cover the skillet for a couple of minutes to allow the cheese to melt.
- Serve: Once the cheese is melted, give everything a good stir. Your flavorful creation is ready to be served!
Notes
For added flavor, marinate steak in olive oil, lime juice, garlic, and spices a few hours before cooking.
