Description

A delightful meal combining tender chicken with apple cider flavors and a refreshing autumn slaw.


Ingredients

  • 4 chicken thighs (or breasts)
  • 1 cup fresh apple cider
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups cabbage, shredded
  • 1 cup carrots, grated
  • 1 apple, thinly sliced
  • Fresh herbs (for garnish, optional)


Instructions

  1. In a bowl, combine apple cider, chicken broth, honey, Dijon mustard, minced garlic, and grated ginger. Whisk until well blended.
  2. Place chicken in a resealable bag and pour marinade over it. Seal and marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  3. Preheat your oven to 375°F (190°C). Remove chicken from the marinade, reserving it for later.
  4. Heat olive oil in a skillet over medium heat, then sear the chicken for about 5 minutes per side until golden brown.
  5. Transfer the chicken to a baking dish and pour reserved marinade over it. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  6. Meanwhile, mix shredded cabbage, grated carrots, and sliced apples in a large bowl. Drizzle with olive oil and toss to combine, seasoning with salt and pepper to taste.
  7. Once the chicken is done, let it rest briefly before serving alongside the slaw.

Notes

For added flavor, consider using a mix of different apple varieties in the slaw.
