Description

A delightful rice bowl featuring succulent chicken coated in a sticky glaze, served over fluffy rice and drizzled with zesty spicy mayo.


Ingredients

  • Chicken thighs or breasts, diced
  • Soy sauce
  • Honey or alternative sweetener
  • Garlic, minced
  • Ginger, grated
  • Rice (preferably jasmine or basmati)
  • Chicken broth or water
  • Mayonnaise
  • Sriracha or other spicy sauce
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional)


Instructions

  1. In a mixing bowl, combine chicken with soy sauce, honey, garlic, and ginger. Let it marinate for at least 15 minutes.
  2. Cook the rice according to package instructions, using chicken broth for added flavor.
  3. In a skillet over medium heat, cook the marinated chicken until browned and cooked through, about 10-15 minutes.
  4. For the spicy mayo, mix mayonnaise with sriracha to taste until well combined.
  5. Serve the cooked chicken over rice, drizzle with spicy mayo, and garnish with green onions and sesame seeds.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. For longer storage, consider freezing the chicken and rice separately.
