Ingredients
- 2 lbs chicken thighs or breasts
- 1/2 cup honey
- 1/2 cup soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon ketchup
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a mixing bowl, combine honey, soy sauce, minced garlic, ketchup, and ground ginger.
- Place the chicken into your crockpot and pour the honey garlic mixture over it, ensuring each piece is well-coated.
- Add salt and pepper according to your taste.
- Cover the crockpot and set it to cook on low for 6 to 8 hours, or high for 3 to 4 hours.
- Gently shred the chicken with two forks and stir it back into the sauce.
- Plate the chicken over a bed of rice or noodles, garnished with chopped green onions.
Notes
For a vegetarian option, substitute chicken with tofu. Store leftovers in an airtight container in the fridge for up to 3-4 days.
