Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with chili powder, cumin, salt, and pepper.
- Cook until chicken is golden brown and cooked through, about 8-10 minutes.
- Stir in the corn and lime juice, allowing it to cook for another 5 minutes until heated through.
- In a separate pot, cook the rice according to package instructions.
