Description

A delightful bowl of juicy chicken, sweet corn, and zesty seasonings that brings street food flavors right to your kitchen.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup rice (white or brown)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken, seasoning with chili powder, cumin, salt, and pepper.
  2. Cook until chicken is golden brown and cooked through, about 8-10 minutes.
  3. Stir in the corn and lime juice, allowing it to cook for another 5 minutes until heated through.
  4. In a separate pot, cook the rice according to package instructions.
  5. Serve the chicken and corn mixture over the rice, garnished with fresh cilantro.

Notes

Feel free to swap the rice with quinoa for a nutty flavor or use cauliflower rice for a low-carb option. Best enjoyed with avocado or feta cheese.
