Ingredients
- 1 lb chicken breast, diced
- 1 can corn, drained
- 2 cups cooked rice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
- Fresh cilantro, for garnish
- Optional: beef bacon, crumbled
Instructions
- In a pan over medium heat, add diced chicken. Season with chili powder and garlic powder, and cook until browned.
- Stir in the drained corn and lime juice. Cook for another 5 minutes until the corn is slightly caramelized.
- In bowls, layer a scoop of rice, followed by the chicken and corn mixture.
- Garnish with fresh cilantro and crumbled beef bacon, if using. Serve warm.
Notes
