Ingredients

  • 1 pound chicken breast, diced
  • 1 cup corn (fresh or canned)
  • 1 cup rice (white or brown)
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, sautéing until they soften (about 5 minutes).
  2. Stir in garlic, cooking for an additional minute until fragrant.
  3. Add the diced chicken to the skillet, seasoning with chili powder, cumin, salt, and pepper. Cook until the chicken is browned and cooked through.
  4. Incorporate the corn, followed by the rice. Pour in 2 cups of water or chicken broth, bringing it all to a boil.
  5. Lower the heat, cover, and simmer for 20 minutes until the rice is tender. Fluff with a fork before serving.

Notes
