A moist and rich cake combining blackberries and pistachios, perfect for any occasion.
Ingredients
- 1 cup olive oil
- 1 cup granulated sugar
- 3 large eggs
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup shelled pistachios, chopped
- 1 cup blackberries, fresh or frozen
- Zest of one lemon (optional)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together olive oil and granulated sugar until well combined.
- Add the eggs one at a time, mixing thoroughly after each addition.
- In a separate bowl, combine flour, baking powder, and salt. Gradually incorporate this dry mix into the wet ingredients.
- Gently fold in the chopped pistachios and blackberries, being careful not to crush the fruit.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow it to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Serve with whipped cream or vanilla ice cream. Optionally drizzle with honey or lemon zest.
