Description

A moist and rich cake combining blackberries and pistachios, perfect for any occasion.


Ingredients

  • 1 cup olive oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup shelled pistachios, chopped
  • 1 cup blackberries, fresh or frozen
  • Zest of one lemon (optional)
  • Powdered sugar (for dusting, optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together olive oil and granulated sugar until well combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually incorporate this dry mix into the wet ingredients.
  5. Gently fold in the chopped pistachios and blackberries, being careful not to crush the fruit.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, allow it to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve with whipped cream or vanilla ice cream. Optionally drizzle with honey or lemon zest.
