Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (canned or fresh)
- 1/2 cup teriyaki sauce
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper, to taste
- Green onions, for garnish
Instructions
- Place the chicken breasts at the bottom of the crock pot.
- In a medium bowl, combine pineapple chunks, teriyaki sauce, brown sugar, soy sauce, ketchup, garlic, and ginger.
- Pour the sweet sauce mix over the chicken.
- Season with salt and pepper to taste.
- Cover and cook on low for 4-6 hours, or until the chicken is tender and cooked through.
- Once cooked, shred the chicken using two forks and stir it back into the sauce.
- Serve hot over a bed of rice, garnished with green onions.
Notes
For a vegetarian version, swap chicken for tofu. Marinate chicken in teriyaki sauce for extra flavor.
