Description

A vibrant and flavorful dish featuring tender chicken enveloped in a luscious, sweet-savory sauce, perfect for busy weeknights and family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup teriyaki sauce
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper, to taste
  • Green onions, for garnish


Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. In a medium bowl, combine pineapple chunks, teriyaki sauce, brown sugar, soy sauce, ketchup, garlic, and ginger.
  3. Pour the sweet sauce mix over the chicken.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 4-6 hours, or until the chicken is tender and cooked through.
  6. Once cooked, shred the chicken using two forks and stir it back into the sauce.
  7. Serve hot over a bed of rice, garnished with green onions.

Notes

For a vegetarian version, swap chicken for tofu. Marinate chicken in teriyaki sauce for extra flavor.
