Description

A comforting dish blending sweet and savory flavors with juicy chicken breasts in a delightful pineapple sauce, perfect for family dinners or casual gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup pineapple juice
  • 1 cup diced pineapple (fresh or canned)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • Sliced green onions (optional)
  • Red pepper flakes (optional)
  • Bell peppers (optional)
  • Fresh cilantro or parsley (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. Prep the chicken breasts, keeping them whole or cutting them into smaller pieces for faster cooking.
  2. Position the chicken at the bottom of your crockpot.
  3. In a bowl, whisk together the pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper until the brown sugar dissolves.
  4. Pour the mixture over the chicken, ensuring it’s evenly coated.
  5. Cover and let it simmer on low for 6–8 hours or high for 3–4 hours until the chicken is tender and fully cooked.
  6. Shred the chicken with two forks and stir it back into the sauce.
  7. Serve hot, garnished with green onions or sesame seeds.

Notes

For thicker sauce, remove the lid during the last hour of cooking. Can substitute proteins and sauces for different variations.
