Ingredients
- 4 boneless, skinless chicken breasts (about 2 pounds)
- 1 cup pineapple juice
- 1 cup diced pineapple (fresh or canned)
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Sliced green onions (optional)
- Red pepper flakes (optional)
- Bell peppers (optional)
- Fresh cilantro or parsley (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prep the chicken breasts, keeping them whole or cutting them into smaller pieces for faster cooking.
- Position the chicken at the bottom of your crockpot.
- In a bowl, whisk together the pineapple juice, diced pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper until the brown sugar dissolves.
- Pour the mixture over the chicken, ensuring it’s evenly coated.
- Cover and let it simmer on low for 6–8 hours or high for 3–4 hours until the chicken is tender and fully cooked.
- Shred the chicken with two forks and stir it back into the sauce.
- Serve hot, garnished with green onions or sesame seeds.
Notes
For thicker sauce, remove the lid during the last hour of cooking. Can substitute proteins and sauces for different variations.
