Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 cup pineapple chunks, fresh or canned (drained)
- ½ cup low-sodium soy sauce
- ¼ cup brown sugar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, freshly grated
- Chopped green onions, for garnish
Instructions
- Prepare the sauce: In a bowl, mix the soy sauce, brown sugar, honey, minced garlic, and grated ginger.
- Combine ingredients: Place the chicken in the crockpot, then pour the sauce over it, ensuring it’s well-coated.
- Add pineapple: Add the pineapple chunks directly into the sauce, stirring gently to distribute.
- Set the slow cooker: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and easily shredded.
- Shred and serve: Once done, shred the chicken with two forks right in the pot, mixing it well with the sauce.
