Description

A delightful sweet and savory chicken dish that combines pineapple, soy sauce, and ginger for a tropical flavor experience, all cooked effortlessly in a crockpot.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks, fresh or canned (drained)
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, freshly grated
  • Chopped green onions, for garnish


Instructions

  1. Prepare the sauce: In a bowl, mix the soy sauce, brown sugar, honey, minced garlic, and grated ginger.
  2. Combine ingredients: Place the chicken in the crockpot, then pour the sauce over it, ensuring it’s well-coated.
  3. Add pineapple: Add the pineapple chunks directly into the sauce, stirring gently to distribute.
  4. Set the slow cooker: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and easily shredded.
  5. Shred and serve: Once done, shred the chicken with two forks right in the pot, mixing it well with the sauce.

Notes
