Description

A comforting slow-cooked Bourbon Chicken recipe featuring tender chicken thighs simmered in a sweet and tangy sauce.


Ingredients

  • 3 pounds Chicken Thighs (Boneless and skinless)
  • 1 cup Light Brown Sugar
  • 1 cup Soy Sauce
  • 1/3 cup Bourbon Whisky
  • 2 tablespoons Apple Cider Vinegar
  • 1/2 teaspoon Ground Ginger
  • 1 tablespoon Honey
  • 1/2 teaspoon Red Pepper Flakes
  • 4 cloves Garlic (minced)
  • 3 tablespoons Cornstarch
  • 2 tablespoons Water
  • 1/4 cup Green Onions (chopped for garnish)


Instructions

  1. Place the trimmed chicken thighs into the slow cooker.
  2. In a medium mixing bowl, whisk together the remaining ingredients, excluding the cornstarch, water, and green onions.
  3. Pour this mixture over the chicken thighs.
  4. Cover the slow cooker and set it to high for 4 hours or low for 6 hours.
  5. Once the cooking time is up, transfer the chicken to a plate and chop it into bite-sized pieces.
  6. In a separate bowl, combine the cornstarch and water until dissolved and then pour this into the sauce in the slow cooker. Whisk together.
  7. Return the chopped chicken to the sauce, giving it a good stir to combine, then cover once more.
  8. Allow it to bubble for a few minutes before switching off the slow cooker.
  9. To serve, sprinkle with the chopped green onions and savor over a bed of rice.

Notes

For a richer flavor, consider marinating the chicken in the sauce before cooking. Substitute chicken thighs with breasts for a leaner option.
