A comforting slow-cooked Bourbon Chicken recipe featuring tender chicken thighs simmered in a sweet and tangy sauce.
Ingredients
- 3 pounds Chicken Thighs (Boneless and skinless)
- 1 cup Light Brown Sugar
- 1 cup Soy Sauce
- 1/3 cup Bourbon Whisky
- 2 tablespoons Apple Cider Vinegar
- 1/2 teaspoon Ground Ginger
- 1 tablespoon Honey
- 1/2 teaspoon Red Pepper Flakes
- 4 cloves Garlic (minced)
- 3 tablespoons Cornstarch
- 2 tablespoons Water
- 1/4 cup Green Onions (chopped for garnish)
Instructions
- Place the trimmed chicken thighs into the slow cooker.
- In a medium mixing bowl, whisk together the remaining ingredients, excluding the cornstarch, water, and green onions.
- Pour this mixture over the chicken thighs.
- Cover the slow cooker and set it to high for 4 hours or low for 6 hours.
- Once the cooking time is up, transfer the chicken to a plate and chop it into bite-sized pieces.
- In a separate bowl, combine the cornstarch and water until dissolved and then pour this into the sauce in the slow cooker. Whisk together.
- Return the chopped chicken to the sauce, giving it a good stir to combine, then cover once more.
- Allow it to bubble for a few minutes before switching off the slow cooker.
- To serve, sprinkle with the chopped green onions and savor over a bed of rice.
Notes
For a richer flavor, consider marinating the chicken in the sauce before cooking. Substitute chicken thighs with breasts for a leaner option.
