Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
- Whole wheat tortillas
- Mixed greens
- Sliced cucumbers
- Sliced bell peppers
- Shredded carrots
Instructions
- In a medium bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper to make a marinade.
- Add the chicken breasts to the marinade, ensuring they’re well-coated. Let the chicken marinate for at least 30 minutes.
- Grill or sauté the marinated chicken over medium-high heat until cooked through, approximately 6-7 minutes per side.
- Allow the chicken to rest for a few minutes and then slice it into strips.
- Take a tortilla and lay it flat. Layer with mixed greens, sliced cucumbers, bell peppers, and shredded carrots.
- Place the sliced chicken on top of the veggies and wrap the tortilla tightly.
- Slice the wrap in half, and serve immediately.
Notes
