Description

Tender, marinated chicken wrapped in a colorful array of fresh vegetables, perfect for quick meals or casual gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Whole wheat tortillas
  • Mixed greens
  • Sliced cucumbers
  • Sliced bell peppers
  • Shredded carrots


Instructions

  1. In a medium bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper to make a marinade.
  2. Add the chicken breasts to the marinade, ensuring they’re well-coated. Let the chicken marinate for at least 30 minutes.
  3. Grill or sauté the marinated chicken over medium-high heat until cooked through, approximately 6-7 minutes per side.
  4. Allow the chicken to rest for a few minutes and then slice it into strips.
  5. Take a tortilla and lay it flat. Layer with mixed greens, sliced cucumbers, bell peppers, and shredded carrots.
  6. Place the sliced chicken on top of the veggies and wrap the tortilla tightly.
  7. Slice the wrap in half, and serve immediately.

Notes

Feel free to swap honey for maple syrup or add your favorite veggies. Best enjoyed fresh!
