Ingredients
- 4 boneless, skinless chicken thighs
- 1/3 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons mirin (or white wine)
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated
- Sesame seeds for garnish
- Chopped scallions for garnish
Instructions
- In a medium bowl, whisk together the soy sauce, sugar, mirin, garlic, and ginger until well combined.
- Place the chicken thighs in a large zip-top bag and pour in the marinade. Seal and refrigerate for at least 30 minutes, or overnight for best results.
- Preheat your grill or skillet over medium heat.
- Remove the chicken from the marinade (reserve the marinade) and cook for 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
- Meanwhile, in a small saucepan, bring the reserved marinade to a boil for about 3-4 minutes.
- Drizzle the reduced marinade over the cooked chicken and allow it to soak in for a minute.
- Serve hot, garnished with sesame seeds and chopped scallions.
Notes
For enhanced flavor, marinate the chicken overnight. This allows for deeper penetration of flavors.
