Description

A delightful explosion of flavors combining sweet and spicy elements with savory chicken and zesty sauce.


Ingredients

  • 2 pounds of chicken thighs, boneless and skinless
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sriracha or your favorite hot sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: Chopped peanuts for topping


Instructions

  1. Marinate the chicken: In a bowl, mix honey, soy sauce, lime juice, fish sauce, sriracha, garlic, and ginger. Add chicken thighs, coat well, and let marinate for at least 15 minutes.
  2. Sear the chicken: Heat a skillet over medium-high heat. Add a bit of oil, then sear the marinated chicken until golden brown and cooked through, about 6-7 minutes on each side.
  3. Create the sauce: Remove the chicken from the skillet and keep warm. Pour leftover marinade into the skillet and bring to a simmer. Cook for 3-4 minutes until slightly thickened.
  4. Combine and serve: Return the chicken to the skillet, coat in the sauce until well-glazed, and cook for an additional minute.
  5. Garnish: Serve with fresh cilantro and peanuts if desired.

Notes

Optional to adjust spiciness by varying the amount of sriracha. Marinating longer can intensify flavors.
