Description

Enjoy tender and juicy chicken enveloped in a sticky, flavorful sauce made effortlessly in a slow cooker.


Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 1 cup soy sauce
  • 1/2 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Green onions, for garnish
  • Sesame seeds, for garnish


Instructions

  1. Place the chicken thighs directly into the crockpot.
  2. In a separate bowl, combine the soy sauce, hoisin sauce, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes.
  3. Pour the sauce mixture over the chicken in the crockpot.
  4. Cover with the lid and set to cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, carefully remove the chicken and shred it using two forks.
  6. In a small bowl, mix cornstarch with water, then stir this mixture into the sauce in the crockpot to thicken it.
  7. Return the shredded chicken to the sauce, stirring to coat evenly.
  8. Serve it hot over a bed of rice, garnished with green onions and sesame seeds.

Notes

For added flavor, consider browning the chicken thighs before placing them in the crockpot. Customize spice levels by adjusting red pepper flakes or adding hot sauce.
