Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 cup diced bell pepper (any color)
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup milk
- 1 egg
- 1 teaspoon baking powder
- Salt and pepper to taste
- Toppings: sour cream, salsa, avocado, cilantro
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
- Sauté the chopped onions and bell peppers until soft.
- Add the ground beef, breaking it apart as it cooks. Incorporate the taco seasoning and water, letting it simmer until most of the liquid evaporates.
- Combine the cornmeal, flour, milk, egg, baking powder, and season with salt and pepper in a mixing bowl. Stir until just combined.
- Fill each cupcake liner halfway with the batter, then add a generous spoonful of the beef mixture on top. Finish with a sprinkle of cheese.
- Bake for 15 minutes or until golden brown. Allow to cool slightly before serving.
