Description

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 cup diced bell pepper (any color)
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Toppings: sour cream, salsa, avocado, cilantro


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Sauté the chopped onions and bell peppers until soft.
  3. Add the ground beef, breaking it apart as it cooks. Incorporate the taco seasoning and water, letting it simmer until most of the liquid evaporates.
  4. Combine the cornmeal, flour, milk, egg, baking powder, and season with salt and pepper in a mixing bowl. Stir until just combined.
  5. Fill each cupcake liner halfway with the batter, then add a generous spoonful of the beef mixture on top. Finish with a sprinkle of cheese.
  6. Bake for 15 minutes or until golden brown. Allow to cool slightly before serving.

Notes

For a lighter or vegetarian option, swap ground beef with ground turkey or a plant-based alternative. Best served with a dollop of sour cream or salsa on top.
