Description

A vibrant pasta salad packed with fresh vegetables, hearty protein, and a zesty dressing, perfect for gatherings or a light meal.


Ingredients

  • 3 cups short pasta (like rotini or shells)
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheese (like cheddar or pepper jack)
  • 1 cup corn (fresh, canned, or frozen)
  • 1/2 cup Italian or vinaigrette dressing
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse in cold water to cool down.
  2. Combine the bell peppers, cherry tomatoes, cucumber, red onion, black beans, cheese, and corn in a large bowl.
  3. Add the cooled pasta to the bowl with the veggies.
  4. Drizzle your dressing over the pasta and veggies. Toss everything gently to combine, ensuring all ingredients are well coated.
  5. Season with salt and pepper to taste. You can adjust the dressing as needed for flavor.
  6. Chill in the refrigerator for at least 30 minutes before serving to help meld the flavors.
