Ingredients
- Large flour tortillas
- 4-5 eggs
- Shredded cheese (cheddar or your preferred type)
- Bell peppers, diced
- Onion, diced
- Spinach or other greens
- Salsa (optional)
- Cooking oil or butter
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and add a little oil or butter.
- Sauté the diced onion and bell peppers until they soften.
- Whisk the eggs in a bowl and season with salt and pepper. Pour them into the skillet, stirring gently to scramble.
- Once the eggs are nearly cooked, add the spinach and cheese, allowing them to wilt and melt.
- Remove the skillet from the heat and prepare your tortillas on a clean surface.
- Spoon the egg mixture into the center of each tortilla, then fold and wrap tightly.
- Return the wrapped tortillas to the skillet and cook until golden brown on both sides.
Notes
These wraps can be enjoyed fresh or packed for a meal on the go. Consider adding spices like cumin or paprika for extra flavor.
