Description

A vibrant chicken and corn bowl inspired by street food, perfect for gatherings and using seasonal produce.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups fresh corn, or canned corn, drained
  • 1 cup cooked black beans (optional)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1/2 lime, juiced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • Cooking oil (olive or vegetable)


Instructions

  1. Heat a pan over medium heat and add a splash of cooking oil.
  2. Sauté the diced chicken until golden brown and cooked through, approximately 8-10 minutes.
  3. Add the corn, black beans, chili powder, cumin, salt, and pepper, stirring until the corn is heated through.
  4. Remove from heat and toss in the lime juice and cilantro.
  5. Assemble your bowls by layering the chicken and corn mixture, followed by diced red bell pepper and avocado on top.

Notes

For extra flavor, marinate the chicken with lime juice and spices for at least 30 minutes before cooking.
